Khichdi is an all familiar dish and has been a part of the Indian cuisine and diets since ages. The combination of dal and rice is loved by all, especially when one is suffering from an ailment. 1 cup basmati rice
1 cup yellow or green moong dal
Saunth (as per requirement)
2 tbsp shredded coconut (nariyal)
1 handful of coriander leaves (dhaniya)
3 tbsp Amrutam ghee
3 bay leaves (tej patta) (warm and digestive)
1.5 inch fresh cinnamon bark (daalchini)
5 cardamom pods (elaichi)
5 cloves (laung)
10 black peppercorns (kaali mirch)
½ tsp each of turmeric (haldi), cumin seeds (jeera), fennel seeds (sauf)
1 pinch of hing (asafoetida)
Wash the dal and rice in separate bowls. Soak the dal for 1-2 hours.
In a blender, add coconut, coriander, and ½ cup of water.
Take a large saucepan, add Amrutam ghee, cinnamon stick, cloves, cardamom, peppercorns, fennel seeds, cumin seeds, and bay leaves. Stir for a moment until fragrant.
Add blended items, then hing, turmeric, and salt. Stir until browned.
Add moong dal and rice and mix well.
Add 6 cups of water, cover and bring to a boil for 5 minutes. Simmer until dal and rice are soft (25-30 minutes).
You can add vegetables that suit your constitution for a one-pot meal
Optionally, you can add one cup of diced celery; fresh lemon juice (to increase Agni) and chopped coriander leaves to serve.
