Desi ghee: a salad's favorite companion

Our food choices and a better understanding of healthy food are evolving.   • The main factor for the popularity of olive oil is that it's a low-fat oil versus ghee that has high saturated fats content, but the thin side of ghee is now coming to the fore with the understanding that it has high conjugated linoleic acids which aid weight loss

  • Desi ghee has a longer shelf life and is high in vitamins and antioxidants than olive oil.

While you continue to lead a bustling life, but still crave a bowl of healthy salad, here is a quick and simple salad recipe with desi cow ghee, that fits the bill for your weight loss plan as well: 

 

Sprouted Moong Bean Salad

 

Ingredients:
 

1 cup sprouted moong beans

1/4 cup sprouted black-eye beans

1/4 cup finely chopped tomato

1 tsp. finely chopped coriander leaves 

1/4 cup fresh pomegranate arils

1 tsp. coriander leaves finely chopped

1/2 tsp. cumin seeds

1/4 tsp. turmeric powder

1/4 cup chopped green chilies

2 tsp. Amrutam A2 cow ghee

1/4 tsp. black salt 

Salt and pepper to taste

1 tsp. lemon juice

 

Preparation method: 

  • Set both the beans in a pan and add water till they are covered completely. Add salt and turmeric. Cook on low heat for 5-6 minutes (check, if not slightly tender yet then cook until the sprouts are slightly tender).

  • Strain the extra water and then add Amrutam A2 cow ghee.

  • Add the chopped vegetables and pomegranate arils to the sprouts. Sprinkle all the spices and lemon/lime juice and mix gently. Garnish with coriander leaves.

Note:
 

You can try adding any fruit or vegetable of your choice. However, if you’re a novice cook, it’s best to stick to the above ingredients as the pairing of certain vegetables and fruits can ruin the balance of flavor.
