Gond Laddoo

Gond laddoo is a traditional winter delight. Gond (edible Acacia gum) provides the much-needed heat and energy during chilling winters. It's also very beneficial for pregnant women and breastfeeding mothers. They are a blockbuster combination of amazing taste with nutrients like calcium, protein, and magnesium. Due to their long-lasting nature, you can make your entire winter stock at one time and enjoy it for the entire season, especially when combined with pure desi ghee.
Ingredients:
250 gms Amrutam Desi Ghee
200 gms Gond
200 gms Wheat Flour
350 gms Sugar
1 tbsp Melon Seeds
35 to 40 chopped Almonds
10 Cardamom (peeled and crushed)
Method:
Heat Amrutam ghee in a pan on a low flame and fry Gond in small batches.
Filter flour and fry it in the leftover Ghee till it turns pink, and remove on a plate.
After the Gond cools, press with a rolling pin on the plate itself to make finer Gond.
Add sugar and 3/4 cup water in the pan, prepare the Chashni (sugar syrup, two thread consistency).
Add fried Gond, flour, almonds and Elaichi powder into Chashni, mix all the ingredients properly with your hands.
Take a small amount of the mixture in your hand, make a round laddoo, and keep it on a plate. Continue this exercise till the batter is over.
Keep the Ladoos in the open air for 1-2 hours, and store in an airtight container.

Do not confuse gond with gond katira, another kind of edible gum. Gond is also known as Dink in Marathi and Antu in Kannada.
