Delicious Ghee Jalebis

Jalebis are this twisted, crispy, sweet and often served hot dessert that is everyone's favourite, and at times a guilty pleasure. Especially with pure ghee jalebis, they are so delicious that you don't stop eating it. Here's a simple recipe to make those finger-licking, tasty jalebis.

 

Ingredients:

  • All purpose flour (maida) – 1 cup

  • Sugar – 2 and 1/2 cup

  • Amrutam Desi ghee – for frying

  • Saffron – few strands

Mix it up!

  1. Mix sugar with 2 cups of water and heat until it gets single thread consistency.

  2. Dip saffron strands in water. Keep aside.

  3. Take a thick cotton cloth and make a tiny hole in the middle.

  4. Prepare maida batter to a smooth flowing consistency.

  5. Heat the desi ghee in a broad frying pan.

  6. Add saffron water to sugar syrup and mix well. Keep it warm beside the frying pan.

  7. Fill the cotton cloth with batter, make it into a potli (knot the cloth from the top) and drop the batter into hot ghee in Jalebi shape.

  8. Deep fry on both sides till golden.

  9. Remove and dip in warm sugar syrup for a few minutes.

  10. Drain the excess syrup and serve hot!

Notes:

  1. If the batter is too thick, the jalebis will turn out soft and if watery, they will turn flat and crispy.

  2. Add lemon juice while making the syrup to prevent it from solidifying. It doesn't affect the taste of the syrup.
